Creamy Garlic Shrimp Ravioli

 

📝 Ingredients

  • 450 g (1 lb) cheese ravioli (fresh preferred)
  • 450 g (1 lb) large shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth (or seafood broth for more flavor)
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • 2 tbsp fresh parsley, chopped
  • Optional: squeeze of lemon juice 🍋

👨‍🍳 Instructions

1️⃣ Cook the Ravioli (Don’t Overcook!)

  • Bring salted water to a boil
  • Cook ravioli until just tender (al dente)
  • Drain and reserve ½ cup pasta water

2️⃣ Perfectly Sear the Shrimp

  • Season shrimp with salt & pepper
  • Heat olive oil + 1 tbsp butter in a pan
  • Sear shrimp 1–2 minutes per side only (don’t overcook ❌)
  • Remove and set aside

👉 Pro tip: Slight golden edges = max flavor


3️⃣ Build the Sauce Base

  • In the same pan, add remaining butter + garlic
  • Sauté for 30–40 seconds (not browned)
  • Pour in chicken broth → scrape the pan (flavor boost 🔥)

4️⃣ Make It Creamy & Smooth

  • Add heavy cream → simmer gently (not boiling)
  • Stir in Parmesan gradually
  • Add Italian seasoning + chili flakes

👉 If too thick → add a splash of pasta water
If too thin → simmer longer


5️⃣ Bring Everything Together

  • Add ravioli gently (don’t break them)
  • Return shrimp to the pan
  • Toss lightly until coated

6️⃣ Finish Like a Chef

  • Add parsley + black pepper
  • Optional: squeeze of lemon for balance 🍋

🍽️ Final Result

  • Creamy but NOT heavy
  • Shrimp juicy (not rubbery)
  • Ravioli intact and silky
  • Balanced flavor (not just cream overload)
