Shrimp Ravioli
Creamy Garlic Shrimp Ravioli
📝 Ingredients
- 450 g (1 lb) cheese ravioli (fresh preferred)
- 450 g (1 lb) large shrimp, peeled & deveined
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ½ cup chicken broth (or seafood broth for more flavor)
- ¾ cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt & black pepper to taste
- 2 tbsp fresh parsley, chopped
- Optional: squeeze of lemon juice 🍋
👨🍳 Instructions
1️⃣ Cook the Ravioli (Don’t Overcook!)
- Bring salted water to a boil
- Cook ravioli until just tender (al dente)
- Drain and reserve ½ cup pasta water
2️⃣ Perfectly Sear the Shrimp
- Season shrimp with salt & pepper
- Heat olive oil + 1 tbsp butter in a pan
- Sear shrimp 1–2 minutes per side only (don’t overcook ❌)
- Remove and set aside
👉 Pro tip: Slight golden edges = max flavor
3️⃣ Build the Sauce Base
- In the same pan, add remaining butter + garlic
- Sauté for 30–40 seconds (not browned)
- Pour in chicken broth → scrape the pan (flavor boost 🔥)
4️⃣ Make It Creamy & Smooth
- Add heavy cream → simmer gently (not boiling)
- Stir in Parmesan gradually
- Add Italian seasoning + chili flakes
👉 If too thick → add a splash of pasta water
If too thin → simmer longer
5️⃣ Bring Everything Together
- Add ravioli gently (don’t break them)
- Return shrimp to the pan
- Toss lightly until coated
6️⃣ Finish Like a Chef
- Add parsley + black pepper
- Optional: squeeze of lemon for balance 🍋
🍽️ Final Result
- Creamy but NOT heavy
- Shrimp juicy (not rubbery)
- Ravioli intact and silky
- Balanced flavor (not just cream overload)
