Spicy Shrimp & Pepper Rice Bowl with Boiled Eggs
Ingredients
1 cup cooked white rice
12–15 shrimp, peeled and deveined
1 small onion, sliced
1 green bell pepper, sliced
1 red bell pepper, sliced
2 boiled eggs
2 tbsp cooking oil
1 tbsp garlic, minced
1–2 tsp chili powder or paprika
1 tsp smoked paprika (optional)
1 tsp black pepper
1 tsp cumin (optional)
1–2 tbsp soy sauce
1 tbsp tomato paste or chili paste
Salt to taste
Instructions
Season the shrimp
Pat shrimp dry and season with salt, chili powder, and black pepper.
Cook the vegetables
Heat oil in a pan over medium heat.
Add sliced onions and bell peppers and sauté until slightly soft but still vibrant.
Add garlic and sauce
Stir in minced garlic, soy sauce, chili powder, smoked paprika, and tomato or chili paste. Mix well.
Cook the shrimp
Add shrimp to the pan and cook 2–3 minutes per side until pink and coated in the spicy sauce.
Prepare the bowl
Place warm white rice in a bowl.
Add toppings
Spoon the spicy shrimp and pepper mixture over the rice.
Finish the dish
Add the boiled eggs on the side and sprinkle a little chili powder or paprika on top.
🔥 Tip: Add a drizzle of chili oil or sriracha for an extra spicy kick.
