Homemade Cajun Fish, Shrimp & Creamy Rice Bake
Ingredients
Seafood
2 large white fish fillets (tilapia, catfish, or swai)
1 lb large shrimp, peeled and deveined
Rice Base
2 cups cooked rice
½ cup frozen peas
½ cup diced onion
3 tbsp butter, melted
2 tbsp olive oil
Seasoning Mix
1½ tbsp Cajun seasoning
1 tsp paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper
¼ tsp cayenne pepper (optional)
Salt to taste
Creamy Base
½ cup chicken broth
½ cup heavy cream (or evaporated milk)
Instructions
1️⃣ Preheat the Oven
Preheat oven to 375°F (190°C) and lightly grease a baking dish or foil pan.
2️⃣ Season the Seafood
Season the fish fillets and shrimp generously with the Cajun seasoning mix.
3️⃣ Prepare the Rice Base
In a bowl combine:
cooked rice
peas
diced onion
chicken broth
heavy cream
half of the melted butter
Mix well and spread evenly in the pan.
4️⃣ Add the Seafood
Place the seasoned fish fillets on top of the rice.
Arrange shrimp around the fish.
5️⃣ Add Flavor
Drizzle remaining butter and olive oil over the seafood.
6️⃣ Bake
Cover loosely with foil and bake 30 minutes.
7️⃣ Finish Baking
Remove foil and bake another 10–15 minutes until shrimp are pink and fish is fully cooked.
8️⃣ Rest
Let the dish rest 5 minutes before serving.
