OLD FASHIONED RICE PUDDING

This pudding turns out in a lovely custard texture. A great balm for those seeking a return to some of the old-fashioned foods of their youth! I like it best because it is oven-baked and not made on the stove top.

Ingredients

  • 2/3 c. Minute Rice
  • 2 3/4 c. milk
  • 1/3 c. sugar
  • 1 tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla
  • 1/4 tsp. nutmeg
  • Cinnamon
  • 1/2 c. raisins

Directions

How to make this recipe

First step : Combine Minute Rice, milk & raisins, sugar, butter, salt, vanilla & nutmeg in a buttered 1 quart baking dish.
Second step : Bake in 350-degree oven for 1 h, stirring after 15 mins & again when pudding is done.
Third step : Sprinkle with cinnamon.
Finally step: Serve warm or chilled. Pudding thickens as it stands

    1. It is an instant rice that you get in a box. Minute Rice is the brand name.

    2. What if I use standard rice. Are the cooking instructions the same.

    3. My mother made rice pudding by using leftover cooked rice. Regular rice - instant minute type rice wasn't invented yet. If I recall, she said you could use uncooked rice, but that it would require longer cooking time.

    4. And regular rice needs additional water. May be better to precook the regular rice first.
