Garlic Butter Cajun Seafood Boil
Ingredients
500 g shrimp, shell-on
300 g smoked sausage, cut into chunks
3 ears corn on the cob, cut into rounds
500 g baby potatoes
4 eggs
1/2 cup butter
2 tbsp olive oil
6 cloves garlic, minced
2 tbsp Cajun seasoning
1 tsp paprika
1/2 tsp cayenne pepper (optional)
1/2 tsp black pepper
Salt, to taste
1 lemon, sliced
Chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Add potatoes and cook until almost tender. Add corn and eggs and boil 5 minutes.
2. Add sausage and shrimp to the pot and cook 2–3 minutes until shrimp turn pink. Drain well.
3. In a pan, melt butter with olive oil over medium heat. Add garlic and sauté briefly until fragrant.
4. Stir in Cajun seasoning, paprika, cayenne, black pepper, and salt.
5. Add drained seafood and vegetables to the pan or a large tray. Pour garlic butter sauce over everything and toss to coat.
6. Finish with lemon slices, sprinkle parsley if using, and serve hot.
