 Grandmother’s Buttermilk Cornbread

Ingredients:

1 1/2 cups yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups buttermilk
1 large egg
1/4 cup vegetable oil
2 tablespoons unsalted butter, melted

Instructions:

Preheat your oven to 400°F (205°C) and grease an 8-inch square baking dish.
In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, baking soda, and salt. Mix well.
In a separate bowl, whisk together the buttermilk, egg, vegetable oil, and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Pour the batter into the prepared baking dish and bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
