Potato soufflé

Potato soufflé


Ingredients :

1 kg of potatoes

25 cl of milk

60g butter

5 eggs

150 g of grated cheese

1 pinch of nutmeg

Steps :

1. First, preheat your oven to 220°C.


2. Peel and boil the potatoes for about 30 minutes, depending on their size. Then, drain them and mash them with a fork or potato masher before pouring in the milk and mixing. Finish by incorporating 40 grams of butter.


3. Season everything with a pinch of nutmeg, then leave to cool.


4. Separate the white from the egg yolks and beat the egg whites.


5. Add the egg yolks to the mash, then mix. Add a quarter of the egg whites to the puree with 100 grams of grated Gruyère cheese and whisk everything to loosen the puree.



6. Now, with a spatula, gently fold in the remaining egg whites.


7. Butter the soufflé mold and decant your appliance. Add the rest of the gruyère on top and bake your potato soufflé for 35 minutes.
