Eggplant gratin


Ingredients :

For 4 people


2 nice eggplants

500g mozzarella

Fifteen cherry tomatoes

Thyme, Parsley and Basil

Steps :

1. First, preheat your oven to 200°C.


2. Next, rinse the aubergines and cut them in half lengthwise.


3. Draw a grid on each side, flesh side, and brush with olive oil.


4. Bake them for 20 minutes (this step will allow them to cook beforehand and prevent the cheese from being too toasted).



5. Meanwhile, cut the mozzarella into strips then cut the cherry tomatoes in half. Then chop the herbs.


6. Take the aubergines out of the oven, arrange the slices of mozzarella and the cherry tomatoes on top. Sprinkle with aromatic herbs.


7. Bake again for 15 minutes, until the cheese is melted.
