Smothered Chicken with Creamed Spinach
Ingredients:
Chicken:
1.5 pounds skinless, boneless chicken breasts (4 small chicken breasts or 2 large chicken breasts, cut in half)
¼ teaspoon lemon and pepper seasoning
1 tablespoon of butter
Half a teaspoon of paprika
salt
Creamed spinach:
1 tablespoon of vegetable oil
4 minced garlic cloves
⅔ c grated mozzarella cheese
⅔ c half and half (milk and light cream)
10 ounces of fresh spinach
Other ingredients:
4 slices of cooked and minced bacon
4 slices of pepper jack cheese or monterey jack cheese with jalapenos
1 tablespoon of vegetable oil
4 ounces mushrooms, sliced
Directions:
Prepare oven and heat it to 190°C or 375°F.
Grease a 13" x 9" baking dish with melted butter.
Season the chicken breasts with salt, paprika and lemon pepper. Make sure every well is covered.
Arrange the marinated chicken breasts in the prepared baking dish, fat side facing down.
Place it in the preheated oven and bake for 20 minutes.
Take it out of the oven and let it rest at room temperature.
To prepare the spinach:
Place a large skillet on the stove and place over medium heat.
Add 1 tablespoon of vegetable oil and bring to a boil.
Add spinach and cook for about a minute.
Remove the wilted spinach from the skillet.
In the same pan add half and half minced garlic. Stir until well combined and bring the mixture to a boil.
Add the grated cheese and stir until it is completely melted.
Place the spinach back in the skillet, then cook everything for another minute. Sprinkle salt and pepper to season. Remove the pan from the stove.
To prepare the mushrooms:
Place a frying pan on the stove and turn on the heat over medium heat.
Add 1 tablespoon of vegetable oil and bring to a boil.
Add mushroom slices and sauté until soft and caramelized.
To compile:
Add creamed spinach, crumbled bacon, mushrooms, and cheese on top of each chicken breast.
Put it back in the oven and bake for another 20 minutes.
Grill for about 2 minutes or until cheese turns golden brown.
Serve & enjoy!
