Low carb enchilada meatballs





Ingredients


Meatballs:


1 pound of minced meat

1 egg

1/4 cup grated real cheddar cheese

2 tablespoons of taco seasoning

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper


Sauce


1/4 cup enchilada sauce (3g sugar or less)


Directions:


Meatballs:


 1) Preheat the oven to 400.


 2) Adding all of meatball ingredients to a bowl and mix well to combined.


3) Shape it into about 15 meatballs and place them on a baking sheet lined with aluminum foil.


4) Baking for 25 mn or to cooked through.


Put the casserole together:


1) Preheat the oven to 350 degrees.

2) Pour 1/4 cup of the enchilada sauce into the bottom of a small baking dish or cast iron skillet.

3) Place the cooked meatballs in the plate and top with the remaining enchilada sauce. Put grated cheese on top.

4) Bake for 15 minutes or until cheese melts and bubbles.
